Pickling beetroot (beets US)...Is there an alternative was to complete the final stage...?

Overflow Method. Very important to sterilise bottle and seals. Cook beetroot in pan as per normal Work with one jar at a time. Almost fill the hot jars with boiling fruit. Fill to just below the rim with boiling syrup. Wipe the rim with a scalding cloth. Immediately cover with the sterilised metal seal and screw the band tightly.
